Casa Calavera, which opened in March with Virgin Hotels Las Vegas, also has a large outdoor area, which extends to the resort’s pool. Representatives for restaurant owner Hakkasan Group said they wanted the Virgin location to reflect the feel of their original Casa Calavera in San Jose del Cabo, Mexico, which is on a beach. Hence the new “feet in the sand” seats. The restaurant specializes in Mexican cuisine made with authentic ingredients but adapted to American tastes.

Al Solito Posto, a new location from the James Beard Award finalist James Trees, has a 40-seat covered patio facing the picturesque fountains of Tivoli village and serves classic Italian cuisine with creative touches, such as beef carpaccio with truffle aioli with garlic and arugula with mushrooms in addition to capers and olive oil.

Sister place Ada wine bar, serving cold cuts and small platters as well as favorite vintages, has a shaded patio overlooking some of the lush green landscaping of Tivoli village.

BBQ Project, a permanent food truck docked at the new Circa complex in downtown Las Vegas, has views of the Main Street scene and the action along Fremont Street, and serves homemade smoked meats, such as street tacos with minced breast, grilled chicken or smoked pulled pork.

Esther’s kitchen at 1130 S. Casino Center Blvd. has individual dining tents until June 1st. The patio is complete with grass, lounge chairs and a fire pit. Homemade pasta is a specialty, like Mafalda Nero, with lobster, fennel, truffle and lemon.

Strong Tapas at 4180 S. Rainbow Blvd. has redesigned its patio with a European vibe, designed to evoke a living room on the Black Sea beaches of the chef / owner’s Bulgarian homeland. It serves dishes such as mini peppers stuffed with seasoned ground pork topped with a yogurt and dill sauce.

Green Valley Ranch Resort presented “The Backyard at Sundown” and Red Rock Resort a ‘Crimson in Bloom’, both of which take advantage of the resort’s expansive landscaping and serve up small bites and cold cuts.;

Hawthorn grills and Jade Asian Cuisine & Noodles at the JW Marriott offer stunning views of the Zen-like landscaping of the Summerlin Resort. The dinner menu at Hawthorn Grill includes braised beef ribs with roasted root vegetables and sweet potatoes; Jade offers sushi, teppanyaki, and standards like General Tso’s Chicken.

Cork at The Venetian overlooks the resort’s Venezia Tower pool, with sprawling trees and other plantings. Steak Bouchon, grilled rib eye and béarnaise sauce with fries, is one of the modern take on French cuisine from award-winning chef Thomas Keller.
